Healthy Peanut Butter Balls are gluten-free, grain-free and sweetened with honey. These bites are the perfect no bake dessert!

They taste just like a peanut butter cup, but with a hint of coconut!

If you are a peanut butter and chocolate lover, these are going to be your new favorite dessert! They have a soft cookie dough-like filling and are coated in dark chocolate. I sprinkled mine with some crushed peanuts and flaky sea salt. I love a sweet and savory mix!

Ingredients overview:

  • coconut flour - I don't recommend using a different flour to replace the coconut flour.
  • unsweetened shredded coconut - You can omit if you don't have shredded coconut, but I love the addition.
  • creamy natural peanut butter - Make sure it's nice and drippy. If it's thick and lumpy, it will not mix well. Do not use brands like Skippy or Jif. They are too thick.
  • honey - This is the sweetener for this recipe. Any liquid sweetener should work fine.
  • vanilla extract - For that little something!
  • dark chocolate chips - I love using no added sugar dark chocolate chips.
  • olive oil - This helps the chocolate to become more drippy and easily coat the bites.
  • crushed peanuts and flaky sea salt - optional, but recommended!

Start by mixing together the coconut flour, unsweetened shredded coconut, creamy natural peanut butter, honey and vanilla extract. The consistency should be like dough.

Use a 1 tablespoon cookie scoop, roll into balls and place into the freezer for 15 minutes.

  • While they are firming up in the freezer, melt the chocolate down with olive oil. Place the chocolate chips and olive oil in a microwave safe bowl. Microwave in 30 second increments to ensure the chocolate does not burn. (Example: Microwave for 30 seconds, stir the chocolate and then place back into the microwave.) Repeat this until the chocolate is completely melted.
  • Remove the bites from the freezer, coat in the melted chocolate. Sprinkle some crushed peanuts andflaky sea salton top of each ball, if desired.
  • Place the bites in the fridge for 1 hour, or until hardened and enjoy!

Expert Tips:

  • Be surenot to use conventional peanut butter for this recipe!
  • Chocolate burns very easily.Don't leave the chocolate chips and olive oil in the microwave for more than 30 seconds at a time.
  • Don't place the balls in the freezer to harden completely or the chocolate will sweat when you take it out of the freezer. This is why I say refrigerate.

Dietary adaptations:

  • gluten-free - This recipe is naturally gluten-free.
  • vegan - Use vegan chocolate and swap out honey for pure maple syrup.

      This is what I got from calculating the recipe in my fitness pal. Per ball:
      221 cals
      15.3G fat (7.1g sat fat)
      19.2g carbs
      5g protein

      Is there a reason why nutrition content isn’t provided? All the ingredients are healthy but it’s good to understand how much you’re eating of each nutrient type. Especially if like me you can get carried away with portion sizes!

        I used to not add nutrition info to my recipes. I have over 300 recipes so I haven't had the time to update all of them with the info. All newer recipes have the info listed.

      I personally never tried the recipe without shredded coconut so I cannot guarantee you will achieve the same texture.

      Yay! 🙂

      Grams are hard to convert without actually using a scale to measure. I wouldn't want to just put conversions without measuring for myself. I don't have a scale at this time, but maybe I will do this in the future. You can try an online calculator that converts cups to grams, but as I said, it won't be perfect. You will have to play around with the measurements a bit.
