Mahi Mahi has a wonderful mild flavor with a bit of sweetness and a nice, firm texture. Paired with butter, lemon, and just the right seasonings, then baked to perfection, it's a really tasty fish.

You can usually find mahi mahi year round, but its peak season is during the summer when you're most likely to find fresh mahi mahi at your local grocery store.

Ingredients

Here are the simple ingredients you'll need to make this delicious fish recipe.

  • Mahi Mahi filets- I always prefer to use fresh fish, but you can use frozen if needed.Just make sure to squeeze out as much excess water as possible after defrosting!
  • Fresh lemon slices- We bake the fish with the lemon slices to infuse fresh lemon juice flavors into it while it bakes. You can also serve the baked mahi mahi with lemon wedges to give an extra squeeze.
  • Butter- Melted butter adds a nice flavor to the naturally sweet flavor of mahi mahi. I highly recommend using butter, but you can use olive oil if you prefer.
  • Seasonings- A perfect mix of dried herbs, salt, and pepper come together to season this fish.
  • Red pepper flakes- We only use a bit of red pepper flakes, adding a slight bit of spice. If you're sensitive to spice, you can leave it out.
  • Fresh parsley- Topping the cooked fish with finely chopped parsley gives it a nice fresh taste and a prettier dish.

Instructions

Preheat oven to 400 degrees F and line a rimmed baking sheet with aluminum foil or parchment paper.

Lay the lemon slices on the prepared baking sheet so the mahi mahi can sit on top of them.

Place the fish on top of the lemons and brush them with the butter on both sides.

Combine the paprika, garlic powder, oregano, salt, thyme, red pepper flakes, onion powder, and black pepper in a small bowl. Stir and sprinkle over the fish, coating both sides with seasoning.

Bake the fish for 10 minutes, then broil on high for 1 ½ minutes.

Remove from the oven and top with parsley. Serve immediately

Tips for Making this Recipe

Prepping the fish- Pat the fish dry with paper towels before brushing with butter. This helps the flavoring to really stick to the fish and helps with the flaky texture.

Testing for doneness- Cooking times can vary slightly depending on the thickness of the fish. Your mahi mahi is done with the internal temperature on an instant-read meat thermometer is 145 degrees.

Using Frozen Fish- If you only have frozen mahi mahi, thaw the fish in the refrigerator before using it. Pat the fish fillets dry with a paper towel to squeeze out excess water (it may take several towels to remove all the water).

Substitutions & Variations

  • Types of Fish - this simple recipe can also be used to cook different types of white fish, such as halibut, tilapia, or any other white fish.
  • Fresh Herbs - you can substitute the parsley for other soft fresh herbs like dill, thyme, or cilantro if you'd prefer.
  • Seasonings - if you'd like an additional amount of heat/spice in this recipe, add ¼ teaspoon of cayenne pepper to the seasoning blend.

Storage

Store leftovers in an airtight container in the refrigerator up to 3 days.

You can reheat the fish in the microwave, but I recommend covering it with paper towel while you heat it. Give it an additional squeeze of lemon juice after reheating as well.
